Pink Oyster

The pink oyster is the most vibrant and has a denser cap, giving a ham-like texture. This mushroom can have a slight seafood taste and smell. Some call this the “bacon” mushroom. They say if you cook it to a crispy texture and with the proper seasoning, it can simulate bacon. Out of all the oyster mushrooms, the pink oyster has the shortest shelf life. Oyster mushrooms are known for their anti-inflammatory properties as well as their immune boosting compounds.
